Smoked Mac N Cheese on the Campfire

Ingredients
  

  • 3 tbsp unsalted butter
  • 1/3 cup flour all-purpose works best
  • 3 cups milk 2% is best
  • 1 cup elbow macaroni
  • 2 cups sharp chedder cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 tsp Dijon Mustard
  • Salt and pepper to taste
  • 2 each green onions optional

Instructions
 

  • Get a good hot fire started and warm up your large "cast iron skillet"
  • Melt unsalted butter
  • Once butter is melted, whisk in flour and continue stirring for about 45 seconds
  • Add milk and bring to a simmer
  • Add elbow macaroni and continue stirring and scraping from the bottom of your pan, until tender, about 5 - 8 minutes
  • Remove from heat and stir in cheese and dijon mustard
  • Salt and pepper to taste
  • Let rest for 5 minutes
  • Get ready for your tongue to be slapping your face looking for the next bite
  • Optional:  Cut up green onion and sprinkle on top of your smokey creation.  Be sure to use the entire onion

Notes

This awesome campfire recipe can be made on your propane stove using non stick pots and pans but you'll lose the smoke flavor.   Some of the best food ever made was over an open flame.
